Mail: Another one of my favorite features. You can check your email (with wifi of course) for Yahoo, AOL, Gmail, and .mac (Or other if you know the server). You can even view attachments such as word files. There's a setting so that you can check your email every N minutes, and if you get one, it'll put a red circle near the mail icon indicating the # of new emails that are in your inbox.

YouTube: You all gotta love this. You can search through YouTube with wifi and view all of your favorite videos. Bookmark them, and watch them whenever you have internet. I'll explain later on how you can view YouTube videos without wifi.

Maps: If you have wifi, you can view google earth maps (Sattelite and street). You can also get directions, sort of like mapquest. Like safari, pinch or push out to zoom in/out.

Weather: View a six-day forcast for multiple locations if you have wifi. It gives the type of weather, hi/lo temps, and also the current temperature.

Clock: View the times of different time zones.

Notes: Great app, it's like a Notepad for an iPod. Write your homework, schedule, whatever you want.

Calendar: A calendar that doubles as an agenda. Set some upcoming events and it'll alert you when they're coming up.

Contacts: Store contacts, you can add them right from your iPod.

Calculator: Just a normal calculator. When Firmware 2.0 comes out, they're going to have it so that if you tilt it horizontally, it turns into a scientific calculator.

Stocks: I removed this app because I'm not interested in stocks, but you can view how your favorite stocks are doing. It has graphs of different time periods and everything.

iTunes wifi music store: I've never used it, but if you have wifi, you can order songs straight to your iPod. You can even listen to a thirty-second sample clip of any song.

Music: Of course, all iPods hold music. Also podcasts, audiobooks, etc. But this is pretty cool. When you're playing a song, tilt the iPod to the side so it's horizontal (just like the safari thing). Now you're able to sort through all of your albums by moving them with your finger, and if you click one, you can view all the songs in that album. And if you happen to not be on the song, say you're writing notes or something, you can double tap the home button, and it'll pop up a little dialog that you can view the song, album, and artist, change the volume, close the dialog, and go straight to the music section.

Video: One of the reasons I bought this after my nano. I love putting South Park and Family Guy or movies onto my iPod. You view all videos in wide screen (horizontal).

Photos: View photos, have a slideshow, or slide through them with your finger.

So those are all of the features built into the iPod Touch, and they're great, don't get me wrong. But you can add even more stuff by 'jailbreaking' it. (DO AT YOUR OWN RISK!). Jailbreaking adds an app called Installer, which allows you to add hundreds of apps to your iPod. Some of my favorites are Apollo (AIM, MSN), MXTube (Download YT videos), tons and tons of games, and all sorts of stuff. If you know javascript, you can even make your own apps (or with the SDK if you have a mac). The default iPod came with like 16 apps, and I have about 80 now.

After jailbreaking, you can add a custom theme. All of my switches and buttons are now lime green, and I have a cool glass orb theme for my icons. Without jailbreaking, you can set a custom unlock screen background as long as you put it in photos under iTunes. But you need it jailbroken to set a custom background for the background of the main screen. There are so many things you can customize, like battery icon, wifi icon, colors of anything, keyboard, safari's colors, weather background, weather icons, and the list goes on and on.
